I swapped the sugar for date sugar, a mineral-rich, whole-food sweetener made from dried ground dates. It brings a deep, caramel-like flavor without the crash. The topping is gluten-free, using almond and coconut flour for a crumbly, tender bite that pairs perfectly with the peaches.

Ingredients

For the peach filling:

  • 5 cups fresh peaches, peeled and sliced

  • 1 tbsp arrowroot starch (or tapioca flour)

  • 1 tsp fresh lemon juice

  • 1/2 tsp cinnamon

  • Pinch of sea salt

For the cobbler topping:

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup date sugar

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup full-fat coconut milk (or almond milk)

  • 1/4 cup melted coconut oil or grass-fed butter

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Make the peach filling:
    In a large bowl, toss peaches with date sugar, arrowroot, lemon juice, cinnamon, and salt. Let sit for 10 minutes to macerate. Pour into a greased 9-inch baking dish.

  3. Make the cobbler topping:
    In a medium bowl, whisk together almond flour, coconut flour, date sugar, baking powder, and salt. Add coconut milk, melted coconut oil or butter, and vanilla. Stir until a thick dough forms.

  4. Assemble:
    Spoon the topping over the peaches in rustic dollops—no need to spread it perfectly flat.

  5. Bake for 35–40 minutes, until the topping is golden and the peaches are bubbly.
