This is food that honors both tradition and physiology light, supportive, and grounding.
Where function meets flavor, let’s cook with purpose.
Why Wild Cod is an Ideal Choice
Wild cod is one of the cleanest and most accessible white fish options. It provides:
• High-quality, easily digestible protein
• Selenium and B12 for metabolic and thyroid support
• Natural iodine content
• Anti-inflammatory properties
• A light yet satisfying texture
Choosing wild-caught fish ensures superior nutrient density and cleaner sourcing.
Instructions
1. Preheat the oven
Preheat oven to 400°F.
Line a sheet tray with parchment paper.
2. Prepare the vegetables
Place asparagus, tomatoes, and fennel on the tray.
Drizzle with olive oil, sea salt, and pepper. Toss gently.
Roast for 10 minutes.
3. Season the cod
Pat cod dry with a paper towel.
In a small bowl, combine:
Olive oil
Garlic
Lemon zest
Lemon juice
Parsley
Thyme
Salt and pepper
Spoon mixture evenly over the fish.
4. Roast the fish
Remove tray from oven and place cod between the vegetables.
Return to oven and roast for 10–12 minutes.
Fish is done when flesh is opaque and flakes easily with a fork.
Avoid overcooking to preserve texture.
Chef Marie’s Notes
Gentle roasting protects the delicate integrity of wild fish. High heat or prolonged cooking will toughen the protein.
The olive oil and herbs create a natural infusion, allowing the fish to remain moist and aromatic without heavy sauces.
If possible, source:
Wild Atlantic cod
Pacific cod
Or black cod for a richer variation
Always choose wild-caught over farm-raised.
